Tabbouleh with Dried Fruits
Ingredients
- Bulgur - 10.6 oz
- Pears - 2 pieces
- Green Figs - 4 pieces
- Pistachios - 1.8 oz
- Orange juice concentrate - 23 fl oz
- Light Raisins, Seedless - 1.8 oz
- Fresh Mint - to taste
- Honey - 3 tablespoons
- Vanilla Pod - 2 pieces
- Lemon - ½ piece
- Ground Cinnamon - 1 teaspoon
Step by Step guide
Step 1
Bring the orange juice with cinnamon to a boil, split the vanilla pods in half and add them to the pot, then add honey. After removing the vanilla pods, pour two-thirds of the resulting liquid over the bulgur and let it soak, stirring occasionally to prevent the grains from sticking together.
Step 2
Add diced dried figs and chopped mint. Cover with plastic wrap and let it soak for an hour, stirring occasionally.
Step 3
Reduce the remaining orange juice until it becomes syrupy. Peel the pears and cut them into quarters, drizzling with lemon juice to prevent browning. Toast the pine nuts in a dry skillet. Mix these ingredients and the remaining mint with the bulgur just before serving. Serve with the orange vanilla syrup.
