Ingredients
- Honey - 4.4 oz
- Sugar - 15.9 oz
- Water - 6 fl oz
- Wheat Flour - 17.6 oz
- Ghee - 8.8 oz
Step by Step guide
Step 1
In a large pot, combine water, honey, and sugar. Heat over low heat until the sugar is completely dissolved, stirring constantly. Leave on low heat to reduce.
Step 2
Make the roux: place a large skillet over low heat. Add clarified butter and flour to the skillet. Heat on low until it turns a light caramel color. The flavor should be nutty. Keep warm until the caramel is ready.
Step 3
Cook the caramel mixture over low heat until it turns a caramel color. To check if the caramel is ready, drop a small amount and let it cool. If the drop hardens, the caramel is ready. Pour the caramel onto a wide, flat dish.
Step 4
Wait a few minutes for the caramel to cool, then remove it from the dish and stretch it by hand until it turns white.
Step 5
As soon as the caramel turns white, place it on the countertop and mix it with the glucose syrup. Incorporate the caramel into the glucose and pull it on the table. Stretch the caramel with the glucose into fine strands. Shape it in special molds.
