Ingredients

  • Wheat Flour - 8.8 oz
  • Clarified Butter - 7.1 oz
  • Honey - 5.3 oz
  • Sugar - 15.9 oz
  • Water - 8 fl oz

Step by Step guide

Step 1

First, we prepare the alba. Melt the clarified butter in a small pot, gradually adding the flour in small portions. Begin frying, stirring constantly. At first, the mixture will be crumbly, but during the cooking process (about 30 minutes), it will become soft and homogeneous. The alba is considered ready when a smooth layer of butter appears on its surface, and the mixture becomes liquid — then it should be removed from the heat.

Step 2

Next, we prepare the fragrant honey mixture. Combine the honey with water (250 ml), granulated sugar, and bring to a boil. This process takes some time; during it, we check for readiness by dipping the tip of a matchstick into the boiling mixture, dropping it onto our palm, and rubbing it — if the mixture stretches when pressed and the strands break, we remove it from the heat.

Step 3

Pour the finished honey into a cold greased container. Quickly and from all sides, lift the mixture with a knife to prevent it from hardening. When the mixture thickens slightly, transfer it to a board, take it in your hands, and stretch it, folding it in half, joining the ends, and stretching it again. The key is to do this very quickly, trying not to tear the mixture until it becomes white, shiny, and stretchy.

Step 4

Transfer the warm alba to a cutting board, place the honey mixture on top, form a ring, and together begin to stretch it, then quickly fold it in half and join both ends. As the alba absorbs, the dough will begin to stretch better and spread into thin white strands. Lay the strands on the board and carefully, using your fingers, fill them into molds (small cone-shaped cups can be used).

Step 5

Leave the formed talkysh kaleve in the cold for a while.

Step 6

Turn the mold upside down and knock out the talkysh kaleve.
