Ingredients
- Rice - 7.1 oz
- Whole egg - 4 pieces
- Water - 17 fl oz
- Soy Sauce - 5 tablespoons
- Rice Vinegar for Sushi - 1 teaspoon
- Sake - 1 tablespoon
Step by Step guide
Step 1
Rinse the rice in cold water until the water runs clear. Pour cold water into the pot with the rice and let it sit for 40 minutes. Cover the pot with a lid, bring to a boil over medium heat, and let it boil for 4 minutes. Reduce the heat and cook the rice on low for 15 minutes. Before turning off the heat, increase the heat to maximum for 4 seconds. Leave the cooked rice in the covered pot for 15 minutes, then remove the lid, let it sit for 2 minutes, and gently stir from the bottom up.
Step 2
In a separate bowl, mix the soy sauce, sake, and vinegar, and carefully break the yolks into the mixture without breaking them. Cover with plastic wrap and marinate for at least 3 hours.
Step 3
Before serving, create a well in the rice in a bowl and gently spoon the marinated yolk into the well along with the soy sauce.
