Ingredients
- Mandarins - 4 lbs
- Sugar - 2 lbs
- Cognac - 2.5 oz
- Cinnamon - 1 piece
- Lemon - 1 piece
- Chili jam - to taste
Step by Step guide
Step 1
Peel the tangerines (without being too meticulous), removing the skins and white pith.
Step 2
Divide into segments, cut each in half, and sprinkle with sugar.
Step 3
Slice the lemon with the skin.
Step 4
Place on the heat until juice is released.
Step 5
Add cognac and cinnamon, a quarter teaspoon of chili paste, and boil for 5-7 minutes.
Step 6
Turn off the heat and let it cool completely. Then boil again for 5-7 minutes. Repeat this 4-5 times.
Step 7
That's it – the jam is ready. Store in the refrigerator.
