Ingredients
- Mandarins - 8.8 oz
- Gelatin - 0.4 oz
- Heavy cream - 13 fl oz
- Sugar - 2.8 oz

Prepare all the ingredients.

Peel the tangerines, then separate them into segments, remove the skin and seeds.
Step 3
Blend the remaining tangerine pulp. You will need 100 grams of tangerine puree for the recipe.
Step 4
Mix 100 grams of tangerine puree with sugar and gelatin.
Step 5
When the gelatin softens, heat the mixture and whisk until the gelatin is completely dissolved. Then remove from heat and let it cool.
Step 6
Whip the cream to stiff peaks.
Step 7
Gently fold the whipped cream into the tangerine mixture using a spatula. Mix quickly and carefully, moving from bottom to top to maintain the airiness of the cream.
Step 8
Chill the mixture in the refrigerator for at least 30 minutes, preferably for 2 hours.
Step 9
Serve the tangerine mousse in dessert cups.
