Ingredients
- Wheat Flour - 13.8 oz
- Salt - a pinch
- Butter - 14.1 oz
- Farm fresh eggs - 7 pieces
- Powdered Sugar - 12.3 oz
- Ground Almonds - 8.8 oz
- Apricot Jam - 3 tablespoons
- Fresh Berries - 14.1 oz
Step by Step guide
Step 1
For the dough, sift 350 grams of flour and salt onto a work surface. Soften 150 grams of butter cut into small pieces until very soft. Mix with 100 grams of powdered sugar using your hands. Add 2 lightly beaten eggs and gradually incorporate the mixture into the flour. Knead well until a uniform dough forms, shape into a ball, wrap in plastic wrap, and refrigerate for 1 hour.
Step 2
For the almond cream, beat the remaining butter until creamy, add the remaining powdered sugar, almonds, and 40 grams of flour. Beat well and gradually add the remaining eggs while continuously mixing. Transfer to a clean bowl, cover with plastic wrap, and refrigerate for 24 hours.
Step 3
Preheat the oven to 356°F. Roll out the dough to a thickness of 2 mm and cut out 10 circles to fit the tartlet molds. Place the dough into the molds, pressing lightly. Transfer the almond cream to a piping bag and fill the dough with it. Place on a baking sheet and bake for 10 minutes until golden. Cool and top with berries. Heat the jam with 1 teaspoon of water and brush over the berries.
