- Egg white - 2 pieces
- Butter - 2.8 oz
- Sugar - 5.3 oz
- Raisins - 3.4 oz
- Wheat Flour - 2½ cups
- Activated Baking Soda - ½ teaspoon
- Water - 1 cup
- Black tea - 1 teaspoon
Step by Step guide
Step 1
Pour a cup of water into a small pot and add the tea leaves. Bring to a boil and strain into a cup, adding boiling water to fill the cup. Pour the strained tea back into the pot and add the rinsed raisins. Bring to a boil and simmer on low heat for 5 minutes, then add the baking soda and boil for another minute. Remove from heat, cover, and let cool.
Step 2
Beat the butter with the sugar, continuously whisking, and add the eggs one at a time. Mix the flour with the baking powder, add it to the butter mixture while stirring, and finally pour in the cooled tea with raisins and mix thoroughly.
Step 3
Grease the mold with butter. Bake on the middle rack — medium fan speed, at 356°F, for 35–50 minutes.
