Tender Apple Pie with Meringue
Ingredients
- Water - 1 cup
- Apple - 2 lbs
- Whole egg - 1 piece
- Egg white - 0.2 oz
- Sugar - 10.6 oz
- Puff Pastry - 1 piece
Step by Step guide
Step 1
Peel the apples (they should be firm), remove the skin, and cut them into wedges or pieces, about 3–5 mm thick.
Step 2
Pour a cup of water into a pan and add a cup of granulated sugar. Cook the caramel without stirring. Once the sugar turns golden, add the apples and caramelize them for 5 minutes.
Step 3
Remove from heat and take the apples out of the syrup.
Step 4
Thaw a sheet of ready-made puff pastry. Roll it out into a rectangle. Carefully, using the tip of a knife, make a cut around the perimeter of the pastry, about 2 cm from the edge, as if outlining the edge of the pie. It is important not to cut through the pastry!
Step 5
Place the apple filling (without the juice) inside, not going beyond the edges of the 'outlined' crust.
Step 6
Let it sit for about 5–10 minutes, brush the edge of the pie with egg yolk, and bake until lightly golden. The temperature depends on your oven. I bake at 428°F.
Step 7
Meanwhile, whip 5 egg whites with a pinch of salt until soft peaks form, then add 100 grams of sugar and whip until you achieve a thick, glossy mixture, like for meringue.
Step 8
Take out the golden pie, spread the whipped egg white over the apples, and return it to the oven for another 10 minutes, until the meringue is golden.
