Ingredients
- Semi-soft cream cheese - 14.1 oz
- 10% cream - ½ cup
- Sugar - 1 cup
- Meyer Lemon Juice - 2 teaspoons
- Butter - 7.1 oz
- Yubileynoye Cookies - 8.8 oz
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Crush the cookies with half a cup of sugar in a blender. Add the butter and mix until smooth.
Step 3
Grease the bottom and sides of a springform pan with butter. Firmly press the mixture into the bottom and sides of the pan to form a crust.
Step 4
Prepare the filling: beat the cream cheese with the remaining half cup of sugar.
Step 5
In a separate bowl, whip the cream with the lemon juice using a mixer. Gently fold the cream into the cheese mixture with light, upward motions.
Step 6
Pour the filling into the cookie crust and bake in the oven for 15–20 minutes.
Step 7
After baking, let it cool and refrigerate for 30 minutes. It will taste better this way!
