Terrine of Creamy Ice Cream and Strawberries
Ingredients
- Roasted Peanuts - ¼ cup
- Shortbread Cookies - 4 pieces
- Butter - 10 tablespoons
- Wheat Flour - 1 cup
- Raw cane sugar - 0.3 cups
- Vanilla salt - ½ cup
- Egg white - 2 pieces
- 33% Cream - 1 cup
- Semi-soft cream cheese - 3.9 oz
- Strawberry - 10.6 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Preheat the oven to 320°F. Line a 20x20 cm baking dish with parchment paper. Set aside.
Step 2
In a blender, crush the pecans and shortbread cookies into a coarse, uneven crumb.
Step 3
In a bowl, combine the crushed nuts and cookies, melted butter, flour, and cane sugar. Mix well with your hands. Evenly distribute the resulting dough in the baking dish. Bake in the oven for 10 minutes, then remove the dish, stir the crumble, return it to the oven, and bake for another 10 minutes. After the time is up, remove and cool at room temperature.
Step 4
Whip the egg whites with a pinch of salt until soft peaks form, gradually adding the vanilla sugar. In a separate bowl, whip the cream until thick. In another bowl, mix the cream cheese and the juice of one lemon. Gently fold the whipped cream into the cheese mixture. Finally, gently fold in the whipped egg whites.
Step 5
Remove the stems from the strawberries and cut them into quarters. Carefully fold the strawberries into the cheese mixture.
Step 6
Spread half of the crumble on the bottom of the baking dish, pressing it down so the crumbs hold together. Top with the strawberry-cheese mixture and finish with the remaining crumble. Cover the dessert with foil and place it in the freezer overnight.
