Thin Pear Tart with Cinnamon
Ingredients
- Butter - 4 tablespoons
- Ricotta cheese - 2.1 oz
- Wheat Flour - ½ cup
- Sugar - ½ cup
- Salt - 0.1 teaspoon
- Meyer Lemon Juice - 2 tablespoons
- Brandy - 2 tablespoons
- Bartlett Pear - 1 piece
- Ground Cinnamon - 0.1 teaspoon
- Brown Sugar - 1½ tablespoons
Step by Step guide
Step 1
Preheat the oven to 392°F. Line a baking sheet with parchment paper.
Step 2
In a food processor, combine the ricotta and softened butter. Add the flour, half of the sugar, and salt. Mix well. Spread the dough onto the prepared baking sheet and use your fingers to shape it into a thin circle with a diameter of 20 cm.
Step 3
In a small bowl, mix the remaining sugar, lemon juice, and brandy.
Step 4
Cut the pear in half lengthwise and remove the core. Then slice it thinly, transfer to the lemon syrup, and mix. Then transfer to a colander and let excess liquid drain.
Step 5
Arrange the pears on the dough, pressing them down slightly and leaving the edges clear. Sprinkle with brown sugar and cinnamon on top.
Step 6
Bake in the oven for 25–30 minutes until done. Serve warm.
