Description

All of this is prepared quite quickly — the main time will be spent cooling. Making the cream takes about 15 minutes, whipping the egg whites takes about 10 minutes, and assembling takes another 10 minutes. So, let's get started.

Ingredients

  • Chicken Egg - 4 pieces
  • Fructose - 1 cup
  • Mascarpone Cheese - 17.6 oz
  • Black Coffee - 2 cups
  • Savoiardi Cookies - 8.8 oz
  • Rum - 1 fl oz
  • Cognac - 1 fl oz
  • Vanillin - a pinch

Step by Step guide

Step 1

Brew the coffee and let it cool. When it cools slightly, add 50 ml of cognac or rum; marsala can also be used. Cool until cold.

Step 2

Separate the egg whites from the yolks.

Step 3

Whisk the yolks with half of the fructose until pale and fluffy, then transfer to a water bath and heat, constantly whisking, until the mixture thickens and becomes pale. (NB! Be very careful: stir continuously to prevent the mixture from burning; otherwise, you won't be able to get rid of the taste of scrambled eggs!!!) Then gradually add the mascarpone, one tablespoon at a time, mixing until smooth. The mixture should be quite thick (it depends on the heating time; it should resemble very thick sour cream). Remove from the heat and let it cool well (I put it in the freezer if it's winter); to prevent a crust from forming, cover with a lid, placing a cotton cloth or paper towel underneath.

Step 4

Whip the egg whites with the remaining fructose into a strong foam, adding vanillin (1 packet) and 50 ml of cognac/rum/marsala. Gradually fold in the yolk-cheese mixture, gently mixing with a spatula. The cream should thicken slightly and be smooth.

Step 5

Quickly dip the savoiardi cookies entirely in the coffee (quickly — otherwise, they will immediately get soggy!), shake off excess, and lay them in a single, even layer at the bottom of the dish. Spread half of the cream on top (using a ladle). Then add another layer of cookies and another layer of cream on top. For evenness, gently tap the dish on the table several times. Dust the top with cocoa powder.

Step 6

Refrigerate overnight. In the end, it should be quite firm, and a neat piece should hold its shape when placed on a plate. It should be served with a spatula (don't believe the rumors — no spoon! This is the wrong consistency; it just didn't work out!). If it runs, somewhere you made a mistake, sorry…
