- Whole egg - 3 pieces
- 33% Cream - 8 fl oz
- Sugar - 7.6 oz
- Water - 1 fl oz
- Liqueur - 8 fl oz
- Chicken Egg - 5 pieces
- Wheat Flour - 4.4 oz
Step by Step guide
Step 1
Add sugar to the water, bring to a boil, and simmer for 5 minutes.
Step 2
Take the egg yolk, beat it, and gradually add the hot reduced syrup while continuing to whisk vigorously until it cools and forms a light, airy mixture.
Step 3
Add the mascarpone to the mixture and mix thoroughly, then gently fold in the whipped cream. Place the mixture in the refrigerator while preparing the next components.

Mix the espresso and liqueur; this will be the soaking bath for the sponge cake.
Step 5
Mix together, whisk the sugar and eggs, then incorporate the flour and beat everything well. Pour the mixture into a rectangular baking dish and bake in the oven at 356°F for 14 minutes.

Assemble the components and prepare the tiramisu: cut the cooled sponge cake into circles with a diameter of 10 cm, and soak them in a coffee bath using a pastry brush. Place 40 grams of the mascarpone cheese mixture on top, then repeat the same process to create a second layer.

Then refrigerate for 40 minutes to cool. Before serving, sprinkle with cocoa powder and small pieces of dark chocolate.
