Description
The chocolate should be very hard so that it can be easily grated. You can also sprinkle it with white chocolate, decorating it with shavings of dark chocolate. Just place it in the refrigerator for 20 minutes before using. You can also top it with a few coffee beans, dipping them in chocolate beforehand.
Ingredients
- Egg white - 4 pieces
- Mascarpone Cheese Unagrande - 8.8 oz
- Savoiardi Cookies - 30 pieces
- Powdered Sugar - 2.6 oz
- Instant coffee - 4 fl oz
- Liquid dark chocolate - 2.6 oz
- Cherries in Liqueur - 2 fl oz
Step by Step guide
Step 1
Whisk the mascarpone until it becomes very soft. In another bowl, whisk the egg yolks and sugar until pale for 5 minutes, then add them one spoonful at a time to the mascarpone while whisking. In a separate very clean bowl, whisk the egg whites until soft peaks form and add them one spoonful at a time to the mascarpone.
Step 2
Combine the coffee and rum in a shallow dish, then dip 15 biscuits (half) into the coffee. Arrange the soaked biscuits at the bottom of the dish or bowl.
Step 3
Spread half of the mascarpone mixture over the biscuits. Dip the remaining biscuits in the coffee and layer them tightly. Top with a second layer of mascarpone. Gently tap the bowl or dish to level the layers. Chill for at least 3 hours, preferably overnight.
Step 4
Before serving, sprinkle grated chocolate on top and sift cocoa powder over it.
