Ingredients

  • Chicken Egg - 2 pieces
  • Mascarpone Cheese Unagrande - 8.8 oz
  • Fine white sugar - 2.8 oz
  • Savoiardi Cookies - 20 pieces
  • Cognac - 1 fl oz
  • Freshly brewed green tea - 13 fl oz
  • Cocoa Powder - to taste
  • Chocolate-Covered Coffee Beans - to taste

Step by Step guide

Step 1

Separate the egg whites from the yolks of 2 large eggs or 3 small ones. Whisk the yolks with half of the sugar in a double boiler until it reaches a thick, creamy consistency and the sugar is fully dissolved. Remove from the heat and add the mascarpone, gently mixing until smooth. In a separate bowl, beat the egg whites at room temperature with a pinch of salt, gradually adding the remaining sugar. Fold the well-beaten egg whites into the cheese mixture one spoonful at a time, being careful to maintain their volume.

Step 2

Mix the cold coffee and cognac. Dip the ladyfingers one by one into the coffee for a couple of seconds and place them at the bottom of the dish. Do not soak the ladyfingers in the coffee for too long, or they will become soggy and fall apart. As an alternative, you can line the bottom of the dish where the tiramisu will be assembled with the cookies and then drizzle the coffee and cognac mixture over them. Cover the cookies with a generous layer of cream, and sift unsweetened cocoa powder over the cream. Next, add a second layer of cookies, also soaked in the coffee and cognac. Finally, spread the remaining cream on top and sprinkle with sifted cocoa powder once more.

Refrigerate overnight.
