The recipe was shared with us by Sarah Johnson, a head pastry chef at a local bakery.
Ingredients
- Phyllo Dough - 8.8 oz
- Wheat Flour - 2.5 oz
- Milk - 1 fl oz
- Water - 1 fl oz
- Butter - 1.1 oz
- Chicken Egg - 4 pieces
- Feta cheese - 19.8 oz
- Salt - 0.1 oz
Step by Step guide
Step 1
Combine the milk and water in a pot, add the butter and salt. Place on the heat and bring to a boil.
Step 2
Add the flour to the pot and cook until the dough begins to pull away from the spatula while stirring. Allow the mixture to cool.
Step 3
Transfer to a mixer and, while continuously stirring, add the eggs one at a time. Add the feta cheese and mix everything well until you achieve a smooth, homogeneous mixture.
Step 4
Grease a round baking dish with butter. Lay one sheet of phyllo pastry, brush it with butter to prevent it from becoming too dry during baking. Repeat this process for another 3 layers of pastry. Spread the cheese filling evenly over the phyllo base. Cover the pie by adding another 3 layers of phyllo pastry, brushing each sheet with butter.
Step 5
Before baking, lightly spray the pie with water to achieve a more golden and crispy crust. Bake at 356°F (350 degrees Fahrenheit) for 40 minutes. After 20 minutes of baking, you can spray the dough with water again.
