Ingredients
- Cilantro leaves - ½ bunch
- Green Peas - 1 cup
- Avocado - 1 piece
- Mint - ½ bunch
- Olive Oil - 5 tablespoons
- Salt - to taste
- Chicken Eggs - 4 pieces
- Rye toast - 2 pieces
- Freshly squeezed lime juice - 1 teaspoon
Step by Step guide
Step 1
Peel the avocado and drizzle with lime juice, then mix well to prevent browning.
Step 2
Place the shelled green peas (1 cup) in a food processor along with the avocado, cilantro leaves, mint, and olive oil. Fresh peas can be replaced with frozen: add the peas directly from the freezer into cold water and start heating over low heat. Catch the moment when the peas warm up and thaw but do not cook.
Step 3
Blend until the puree is 'chunky' but not completely smooth; to achieve this effect, it’s better to add the oil gradually. Start with 2 tablespoons, then gradually add the rest.
Step 4
Make 2 toasts in your preferred way, toasted to your liking, and cut them in half.
Step 5
Spread the resulting puree on all 4 halves of the toasts.
Step 6
Place 1 toast in the center of the plate and top it with a fried egg cooked to your liking; place the second toast next to it along with sliced vegetables of your choice.
Step 7
Serve with a meat platter of your choice.
