Ingredients
- Smoked Salmon Flavored Croutons - 5.3 oz
- Dill - 6 stems
- Courgette - 1 piece
- Semi-soft cream cheese - 5.3 oz
- Butter - 5.3 oz
- Pickled capers - 2 tablespoons
- Cilantro - 2 tablespoons
- Garlic - 1 head
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Sourdough Bread - 1 piece
- Orange Bell Peppers - 1 piece
- Marinated cherries - 6 pieces
- Green Butter - 1 bunch
- Grated Pecorino Pepato Cheese - 1 tablespoon
Step by Step guide
Step 1
Take the butter out in advance and soften it to room temperature. Mix the butter with finely chopped dill and cilantro, crushed garlic, salt, and pepper. Wrap in plastic wrap, forming a log. Place in the freezer to set.
Step 2
Remove the skin from the salmon. Cut 4 thin slices and set aside for the canapés. Also set aside 4 small sprigs of dill for decoration. Chop the remaining salmon fillet and cucumber into equal-sized cubes. Mix them in a deep bowl, season with pepper, add soft cheese and chopped dill.
Step 3
Clean the pepper and cut it into thin strips. Rinse the lettuce leaves, dry them, and cut or tear them. Cut the cherry tomatoes in half. Mix everything together, add a little salt, and include a tablespoon of capers. Sprinkle with Parmesan on top.
Step 4
Toast the bread in a toaster, cut it into 4 equal parts, take the butter out of the freezer, cut 4 thin slices, place them on the bread, fold the thin slices of salmon in half, place a couple of capers and a sprig of dill in the middle. Place on the 'green' butter and serve.
