Description

A dessert that embodies the taste of summer in the literal sense: ripe tomatoes, berries, and rosé wine, all the elements of a leisurely vacation come together in one dish. It's important to maintain a delicate balance so that the jelly doesn't end up too bland. Therefore, before adding gelatin, be sure to taste what you've made, keeping in mind that gelatin significantly dulls the flavor, so there should be a bit more sugar than just enough. It’s no surprise that there’s a harmonious flavor unity between tomatoes and garden berries: a ripe tomato has much more in common with a sweet fruit than a vegetable, and botanically speaking, it is indeed a berry.

Ingredients

  • Mixed tomatoes of different colors - 14.1 oz
  • Gelatin - 1.1 oz
  • Fresh Berries - 12.3 oz
  • Powdered Sugar - 2.8 oz
  • Rosé Dry Wine - 10 fl oz
  • Meyer Lemon Juice - 0 fl oz

Step by Step guide

Prepare all the ingredients.

Soak the gelatin in cold water.

Chop the tomatoes randomly and place them in a blender bowl. Add 300 grams of berries and blend.

Strain the resulting mixture through a fine sieve to remove the seeds and skin.

Add 60 grams of powdered sugar and mix well.

Gently warm the tomato mousse on the stove or in the microwave, mix with half of the gelatin, and pour into glasses or molds. Refrigerate for 1 hour.

Gently heat the remaining gelatin in a saucepan over low heat (it should just begin to melt), then add it to the wine and stir. Strain the mixture through a sieve to ensure there are no lumps.

Stir the remaining powdered sugar and lemon juice into the wine-gelatin mixture and mix well.

Pour the mixture into glasses containing berry jelly, filling them up, and place the jelly in the refrigerator until fully set, for another 1–2 hours.
