Tortilla with Ham, Cheese, and Vegetables

Ingredients

  • Tortillas - 4 pieces
  • Ham - 12.3 oz
  • Onion - 2 pieces
  • Canned Corn - 6 oz
  • Orange Bell Peppers - 1 piece
  • Melted Cheese - 8.8 oz
  • Chicken Egg - 2 pieces
  • Crushed Tomatoes in Their Own Juice - 3 pieces
  • Milk - 4 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Mild Chili Spice - to taste

Step by Step guide

Step 1

Finely chop the onion and sauté in vegetable oil until golden brown.

Step 2

Chop the ham finely and add it to the onion. Sauté over medium heat, stirring occasionally.

Step 3

Cut the bell pepper into small cubes. Add the corn and bell pepper to the skillet. Sauté for a couple of minutes uncovered, then a couple of minutes covered.

Step 4

Add the pre-chopped tomatoes and simmer a bit covered.

Step 5

Season with salt, pepper, and add chili. Simmer everything uncovered to let excess liquid evaporate, then remove from heat.

Step 6

Make 2 omelets using one egg each. Beat the egg, add a little salt and 2 tablespoons of milk, and beat again. Pour onto a heated skillet lightly greased with oil, cover with a lid. After about 3 minutes, check the omelet for doneness. Cut the finished omelet in half.

Step 7

Place a grill pan over medium-high heat, and lightly brush with vegetable oil (using a brush).

Step 8

Take a tortilla, place half of the omelet on one half, add 3–4 tablespoons of the ham and vegetable mixture on top, and sprinkle with grated cheese.

Step 9

Fold the tortilla in half and grill on both sides in the heated skillet until grill marks appear on the tortilla.
