Description
A genuine Mexican tortilla recipe sourced from an authentic Mexican source (not from some cookbooks). Tortillas are used to make burritos, tacos, fajitas, and more. Instead of wheat flour, you can use corn flour, and instead of lard, you can use margarine.
Ingredients
- Wheat Flour - 2 glasses
- Salt - 1 tablespoon
- Pork fat - 1.8 oz
- Water - 1 glass
Step by Step guide
Step 1
Pour the flour and salt into a large bowl. Rub the lard or margarine into the flour with your hands until the mixture resembles bread crumbs.
Step 2
Gradually pour in warm water in a thin stream while stirring, until a soft and pliable dough is formed.
Step 3
Dust the board with flour, knead the dough, then cover it with a warmed, damp cloth for 10 minutes.
Step 4
Divide the dough into 12 pieces, roll each piece into a ball, and then flatten it. Use a floured rolling pin to roll each flatbread into very thin rounds (so that the board is visible through them), trying to maintain a circular shape.
Step 5
Place the cooked tortillas on a plate, dusting them with flour to prevent sticking.
Step 6
Heat the skillet until very hot, then reduce the heat and carefully place the tortilla in the pan. Cook for 30 seconds until it starts to bubble, then flip it and cook for another 10 seconds.
Step 7
Before use, let cool. Tortillas stay fresh for 2–3 days. To do this, stack the tortillas with square pieces of oiled parchment paper, cover everything with plastic wrap, and place in the refrigerator.
