Description
A traditional festive pastry found in all regions of France. This 'King's Galette' is baked from early January until Lent, but in some places, it is served specifically on Christmas, that is, December 25th. Inside the classic galette, a figurine of a bean king is hidden — the person who finds it becomes the king of the evening.
Ingredients
- Butter - 4.2 oz
- Puff Pastry - 17.6 oz
- Chopped almonds - ½ glasses
- Wheat Flour - 2 spoons
- Chicken Egg - 2 pieces
- Sugar - 0,1 glasses
- Almond - ½ spoons
- Salt - a pinch
- Whole egg - 1 piece
- Powdered Sugar - to taste
Step by Step guide
Step 1
Preheat the oven to 446°F. Using a mixer, beat the softened butter with ground almonds, flour, two eggs, and sugar, then add a pinch of salt and almond extract.
Step 2
Roll out the dough on a floured surface and cut out two circles the size of a dinner plate. Transfer one circle of dough to a baking sheet lined with parchment paper and brush the top with a small amount of egg yolk mixed with one tablespoon of water. Place the prepared frangipane cream in the center and cover it with the second circle of dough. Gently press down on the top to seal the dough circles and evenly distribute the cream between them.
Step 3
Gently press the edges together with a fork, being careful not to pierce the dough, and create a pattern on top with a sharp knife. Brush the surface of the pie with the remaining egg yolk.
Step 4
Bake at 446°F in the center of the oven for 15 minutes, then reduce the temperature to 356°F and continue baking the pie for another 30 minutes.
Step 5
Allow the pie to cool and dust it with powdered sugar.
