Truffle Cookies with Pistachios
Ingredients
- Butter - 3.2 oz
- Salt - to taste
- Powdered Sugar - 1.4 oz
- Vanilla salt - 0.5 oz
- Wheat Flour - 4.4 oz
- Nougat - 5.3 oz
- Liquid dark chocolate - 2.6 oz
- Instant coffee - ½ teaspoon
- Cream - 3 tablespoons
- Pistachios - 3.5 oz
- White Chocolate - 7.1 oz
Step by Step guide
Step 1
Beat the softened butter with powdered sugar, salt, and vanilla sugar. Sift the flour on top and knead into a uniform dough. Wrap it in plastic wrap and refrigerate for 30 minutes.
Step 2
Line a baking sheet with parchment paper. Roll out the dough on a floured surface to a thickness of 2 cm. Cut out circles with a diameter of 4 cm. Place them on the baking sheet and bake for 9 minutes at 392°F.
Step 3
Melt the nougat, chocolate, coffee powder, and cream in a hot water bath. Cool for 20 minutes, then whip until creamy.
Step 4
Place the mixture into a piping bag fitted with a star-shaped nozzle and pipe a large swirl onto each cookie.
Step 5
Melt the chocolate glaze. Use a teaspoon to place a bit of glaze on the cream. Sprinkle with chopped pistachios and let it set.
