Description

Dextrose in ice cream recipes is responsible not so much for sweetness as for texture: thanks to it, ice crystals will not form in the ice cream during freezing.

Ingredients

  • Milk - 10 fl oz
  • 10% cream - 1 fl oz
  • Dry Malted Milk Powder - 0.7 oz
  • Trofie Pasta - 2 spoons
  • Sugar - 2.1 oz
  • Whole egg - 2 pieces
  • Dextrose - 0.7 oz

Step by Step guide

Step 1

In a bowl, combine the dry milk, sugar, and dextrose.

Step 2

Heat the milk to 167°F, add the egg yolks and cream, then gradually mix in the dry ingredients and blend everything thoroughly with an immersion blender.

Step 3

Add truffle paste to the mixture and stir everything again.

Step 4

Place the container in the refrigerator for twenty minutes until completely cool.

Step 5

Pour the mixture into the ice cream maker and churn until ready — this will take about forty minutes.

Step 6

Scoop the finished ice cream into dessert bowls and serve.
