Ingredients

  • Liquid dark chocolate - 3.5 oz
  • Sugar - 4 tablespoons
  • Wheat Flour - 2.5 oz
  • Cocoa Powder - 3 teaspoons
  • Cinnamon - 8 tablespoons
  • Butter - 4.6 oz
  • Farm fresh eggs - 2 pieces
  • Whole egg - 1 piece

Step by Step guide

Step 1

In 70 g of flour, add 3 teaspoons of cocoa powder and 8 tablespoons of cinnamon, and mix well.

Step 2

Melt the dark chocolate (100 g) with the butter (130 g) in a saucepan over low heat, stirring constantly to prevent burning, until fully melted. Mix until smooth.

Step 3

Thoroughly mix 2 eggs, 1 egg yolk, and 4 tablespoons of sugar, then add to the chocolate mixture. Stir until combined. Then add the flour mixture with cocoa and cinnamon. Mix well again.

Step 4

Spoon the truffle muffin batter into the molds almost to the top, about 1–2 mm below the edge.

Step 5

Place in an oven preheated to 410°F for 7 minutes. The butter will rise during baking, but it will be absorbed back once the muffins are taken out of the oven.

Step 6

Remove the muffins from the oven, let them cool slightly, and place the mold in the refrigerator. Once they are completely cool, carefully remove them from the mold by flipping onto a plate.
