Description
Since tuile cookies can take almost any shape when warm, you can use a rolling pin or a metal cone to shape them into tubes or cones — this way, the cookies can serve as decorations for desserts or ice cream. You can also diversify the flavor of the cookies by adding lemon zest or a few drops of rum to the batter, or, for example, almond extract to enhance the flavor. A little espresso can be added, and the resulting cookies can be decorated with a mascarpone-based glaze, resulting in a variation of tiramisu dessert. My father's favorite cake is 'Napoleon,' and once I covered half of the cookies with a condensed milk-based cream and sprinkled them with puff pastry crumbs. In general, experiment; that’s the beauty of classic recipes that are not overloaded with flavors.

Using a silicone spatula, mix the almond flakes, vanillin, and egg whites.

Melt the butter in the microwave, and while it is still warm, stir it into the almond and egg white mixture. Wrap the bowl with plastic wrap and refrigerate overnight.

The next day, sift the flour into the bowl and mix thoroughly. On a baking sheet lined with parchment paper, drop teaspoonfuls of the batter, leaving enough space between portions.

Preheat the oven to 302°F. Press each potential cookie with a tablespoon dipped in cold water onto the baking sheet to form flat round discs.
Step 5
Bake for 15–18 minutes until evenly golden.
