Tuna and Cheese Pie
Ingredients
- Kefir - 7 fl oz
- Safflower Oil - 3 fl oz
- Sugar - 1 tablespoon
- Salt - 1 teaspoon
- Dry yeast - 0.4 oz
- Wheat Flour - 16.9 oz
- Canned cod liver - 3 cans
- Spanish onions - 1 head
- Mayonnaise - 3.5 oz
- Grated Pecorino Pepato Cheese - 3.5 oz
- Whole egg - 1 piece
Step by Step guide
Step 1
In a microwave or a water bath, heat the kefir and sunflower oil. Do not bring to a boil; they should just be warm. Pour into a bowl, add sugar and salt, and mix with a wooden spatula.
Step 2
Sift the flour and mix it with the dry yeast.
Step 3
Make a well in the flour and pour in the warm mixture. Knead the dough for 10 minutes. The better you knead it, the better it will rise.
Step 4
Cover the bowl with a towel and place it in a warm spot to rise for 1 hour.
Step 5
Grate the cheese on a coarse grater.
Step 6
Chop the white onion.
Step 7
Drain the juice from the canned tuna. Flake the fish with a fork.
Step 8
In a bowl, add the finely chopped onion, tuna, cheese, and mayonnaise. Mix everything together.
Step 9
Roll out the dough into a circle larger than the diameter of the baking dish.
Step 10
Grease a 28 cm baking dish with butter and sprinkle with flour. Place the dough in and form the edges.
Step 11
Layer the filling in a ring shape. Cover with dough on top.
Step 12
Cut the center into eight triangular rays.
Step 13
Lift all the rays and secure them on top of the dough.
Step 14
Brush the pie with egg yolk and let it rise for 10–15 minutes. Preheat the oven to 392°F and bake for 20–25 minutes.
Step 15
Allow the finished pie to cool and transfer it to a serving plate.
Step 16
Serve warm.
