Heat 2 tablespoons of corn oil in a skillet. Add finely chopped onion to the skillet and sauté it over low heat, stirring, until softened, without waiting for it to brown (about 5 minutes).

Add the tuna to the skillet and continue to cook for a few more minutes, breaking the fish into pieces with a fork or spatula.
Step 3
Heat the remaining oil in another skillet, then pour in the beaten eggs. Once the eggs start to set, add the tuna in the center, fold the omelette, and serve.
