Description
Preparing this dish takes two days. The secret to good Turkish delight is to first mix the mass well, and then let it set thoroughly.
Ingredients
- Sugar - 28.2 oz
- Vanilla extract - 1 fl oz
- Meyer Lemon Juice - 0 fl oz
- Vinegar essence - 0 fl oz
- Nuts - 2.6 oz
- Cream of tartar - 0.2 oz
- Powdered Sugar - 2.1 oz
- Water - 1 qt
- Corn Starch - 10.6 oz
- Red Food Coloring - 0.1 oz
Step by Step guide
Step 1
Mix sugar and 360 ml of water with lemon juice. Stirring, bring to a boil. Boil for 5–10 minutes and remove from heat (the syrup should easily form balls when cooled).
Step 2
Using a mixer or blender, gradually add 720 ml of water to mix the cream of tartar and cornstarch. Place the mixture over heat and bring to a boil, stirring constantly to prevent lumps. If lumps do form, they should be removed. Once this mixture boils, slowly pour in the hot syrup while continuously stirring.
Step 3
Then reduce the heat and cook the Turkish delight for 1–2 hours, stirring again until the mass takes on a golden hue. After that, remove the dish from heat, add the fragrant components, food coloring, and nuts (if desired). Line a square baking pan greased with neutral vegetable oil with parchment paper, also greased with oil.
Step 4
Pour the Turkish delight mixture into the pan, then gently shake it to distribute evenly across the surface. Allow the Turkish delight to set. The pan should be covered with plastic wrap, ensuring it does not touch the surface of the Turkish delight.
Step 5
Before cutting the Turkish delight, the knife should be greased with vegetable oil. First, cut the Turkish delight into strips a few centimeters wide (if you find that the Turkish delight is still too sticky, let it sit for a while longer). After each cut, the knife should be greased with oil again. Place the strips on a greased tray and leave overnight. The next morning, cut it into cubes.
Step 6
In a container, mix equal parts of cornstarch and powdered sugar. Place 2–3 pieces of Turkish delight in the container, close it, and shake.
Step 7
Store the finished Turkish delight in a container or wrapped in paper to avoid contact with air.
