Ukrainian semolina pudding with drunken cherries
Ingredients
- Semolina - 3½ tablespoons
- Marinated cherries - 8.8 oz
- Chicken Egg - 1 piece
- Orange juice concentrate - 1 tablespoon
- Brown Sugar - ¼ g
- Cherries in Liqueur - 1 tablespoon
- Sugar - 3 tablespoons
- Butter - 2 tablespoons
- Chopped almonds - to taste
Step by Step guide
Step 1
Cut the cherries in half and remove the pits.
Step 2
Heat a cast-iron skillet. Mix the cherries, orange juice, brandy, and brown sugar on the heated surface. Cook over medium heat, stirring occasionally, until the cherries soften and the syrup thickens, about 10–12 minutes. Remove from heat and let cool to room temperature.
Step 3
Heat a heavy-bottomed pot and add the butter. Melt the butter and gradually sprinkle in the semolina while stirring constantly. Fry the semolina until golden brown, about 5 minutes. Do not overcook the semolina, or it will become bitter.
Step 4
Preheat the oven to 356°F.
Step 5
Grease heatproof molds with butter. Evenly distribute the cherry jam at the bottom of the molds.
Step 6
Beat the egg with 1 tablespoon of sugar. Gently fold in the fried semolina. Spread the mixture over the jam and sprinkle a layer of sugar on top, about 2 tablespoons. Bake in the oven for 10–15 minutes.
Step 7
Remove from the oven and serve, topped with almond flakes.
