Uzbek Samsa
Ingredients
- Wheat Flour - 4 cups
- Water - ½ cup
- Salt - 1 teaspoon
- Chicken Egg - 1 piece
- Beef - 17.6 oz
- Fat Tail Fat - 7.1 oz
- Butter - 7.1 oz
Step by Step guide
Step 1
In a deep bowl, mix the flour with salt, add the egg, water, and knead a stiff dough. Once kneaded, let it 'breathe' for about forty minutes. While the dough is resting, make a pancake from margarine (or butter) with flour. To do this: cut the margarine into small pieces (it is very important that it is at room temperature) and mix it with a small amount of flour, mash it, and shape this mixture (it should resemble dough) into a pancake. Then, roll out the dough thinly and place this pancake on top, fold the dough like an envelope, and roll it out together with the pancake. Then fold it into an envelope again and roll it out, and fold it again, and put it in the cold for an hour, then repeat all of this twice.
Step 2
Cut the meat and fat into small pieces, finely chop the onion, add spices and salt, and leave the filling at room temperature for an hour to marinate.
Step 3
Roll out the dough into a rectangular sheet, cut it into equal squares, place the filling in the center of each square, and seal it into a triangle (the seams should be well sealed so that no liquid leaks out during baking!).
Step 4
Before sending to the oven, brush each triangle with water and sprinkle with sesame seeds.
Step 5
Do not grease the baking sheet on which your samsa will be baked, just spray it with water.
Step 6
Samsa bakes for thirty to fifty minutes.
