Description
Vanilla Biscuit Pudding
Ingredients
- Vanilla Biscotti - 5.3 oz
- Sugar - ½ cup
- Farm fresh eggs - 3 pieces
- Milk - 17 fl oz
- Candied fruits - 1.8 oz
- Raisins - 3.5 oz
- Butter - 3.5 oz
Step by Step guide
Step 1
Break the vanilla biscuits and place them in a pot or bowl. Pour hot milk over them, cover, and let sit for 15–20 minutes. Cut the candied fruits into small cubes, sort the raisins, and rinse them in cold water. Separate the egg yolks from the whites, beat them with sugar, and mix with the soaked biscuits. Then add the chopped candied fruits, raisins, melted butter, and gently fold in the whipped egg whites.
Step 2
Transfer the prepared mixture into a special mold with a hole in the center, previously greased with a thick layer of butter and sprinkled with breadcrumbs. Fill the mold only up to ¾ full to allow space for the pudding to rise. Place the filled mold in the oven for 30–40 minutes at medium heat.
Step 3
The pudding is ready when it becomes firm, rises, and pulls away from the edges of the mold.
Step 4
Carefully unmold the pudding onto a plate and serve hot.
