Vanilla Cake with Berries
Ingredients
- Butter - 3.9 oz
- Sugar - 4 tablespoons
- Wheat Flour - 3.2 oz
- Milk - 1 fl oz
- Chicken Egg - 1 piece
- Vanilla salt - 0.4 oz
- Baking Powder - 0.2 oz
- Salt - a pinch
- Ground Cinnamon - a pinch
- Powdered Sugar - 0.1 oz
- Fresh Berries - 10.6 oz
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
Combine 100 grams of butter with 2 tablespoons of sugar and beat with a mixer until light and fluffy. While continuing to beat, add salt and gradually incorporate the egg yolks, previously separated from the whites.
Step 3
Continue beating, adding part of the flour with baking powder, pour in the milk, and beat a little more. Add the remaining flour, vanilla, and mix with a spatula.
Step 4
Line a small springform pan with baking paper, grease with the remaining butter, and evenly spread the batter. Arrange all the berries on top of the batter (you can use one type of berry or a mix, for example, 100 grams of raspberries, 100 grams of strawberries, and 100 grams of blackberries or blueberries), sprinkle with the remaining sugar and cinnamon, and place in the preheated oven for 10-15 minutes.
Step 5
Beat the egg whites with a mixer until stiff peaks form. Without turning off the mixer, add 1 tablespoon of powdered sugar. Continue beating, gradually adding the remaining powdered sugar and beat a little more.
Step 6
Transfer the egg white mixture to a piping bag. Remove the cake with berries from the oven and pipe the meringue on top in the shape of roses.
Step 7
Lower the oven temperature to 356°F and place the cake back in for another 25 minutes.
