Description

Clafoutis is a traditional French dessert that combines the characteristics of a casserole and a pie. The classic version is made with fresh cherries with pits, but nowadays cherry clafoutis is more often made with canned pitted fruit. There are also peach, apple, and pear clafoutis, where the fruits are cut into pieces the size of cherries.

Ingredients

  • Marinated cherries - 22.9 oz
  • Sugar - 4 tablespoons
  • Kirsch - 4 tablespoons
  • Farm fresh eggs - 3 pieces
  • Wheat Flour - 1.8 oz
  • Milk - 5 fl oz
  • Semi-soft cream cheese - 7.1 oz
  • Vanilla extract - 1 teaspoon
  • Powdered Sugar - to taste

Step by Step guide

Step 1

Pit the cherries, trying to keep them whole.

Step 2

Preheat the oven to 374°F. Place the cherries at the bottom of a greased 1-liter baking dish. Drizzle with kirsch and sprinkle with sugar.

Step 3

Beat the eggs with a mixer for about 1–2 minutes. Add the flour and remaining sugar, then add the remaining kirsch, milk, cream, and vanilla.

Step 4

Evenly pour the batter over the cherries and bake for 40 minutes until pale golden. Allow to cool to room temperature, sprinkle with powdered sugar, and serve.
