Ingredients

  • Wheat Flour - 30 oz
  • Water - 13 fl oz
  • Butter - 2.8 oz
  • Chicken Egg - 1 piece
  • Whole egg - 6 pieces
  • Milk - 1 qt
  • Sugar - 13.8 oz
  • Dry yeast - 0.5 oz
  • Vanillin - 4½ g
  • Salt - 0.4 oz

Step by Step guide

Step 1

Prepare the dough. Mix the flour (650 g), yeast, sugar (40 g), and salt. Add warm water and mix well. Incorporate the butter (30 g), egg, and vanilla (1.5 g), mix thoroughly and let it rise in a warm place, covered, for 30 minutes.

Step 2

Prepare the filling. Whisk the egg yolks and sugar together until smooth, then add the flour and mix well. Gradually incorporate the hot milk and cook for 20 minutes.

Step 3

Cool to room temperature and incorporate the softened butter and vanilla. Mix until you achieve a smooth consistency.

Step 4

Form balls from the dough and let them rest for another 5 minutes. Slightly roll out the dough and add the cream inside. Fold over and deep-fry until golden brown.
