Vanilla Honey Cream Ice Cream
Ingredients
- Cream 22% - 13 fl oz
- Egg white - 4 pieces
- Honey - 1 tablespoon
- White Beans - 1 piece
Step by Step guide
Step 1
Gently mix (do not whip) the cream with the egg yolks.
Step 2
Extract the seeds from the vanilla bean. Add the seeds and the vanilla bean to the cream and egg mixture.
Step 3
Place the mixture over low heat and cook without bringing to a boil for 7–10 minutes. The mixture should thicken but not boil. Remove the vanilla bean. If the mixture has curdled, it can be blended in a blender.
Step 4
When the thickened mixture cools, add the honey.
Step 5
Pour the prepared and cooled mixture into an ice cream maker and let it churn for 30 minutes.
