Ingredients
- Condensed Milk - 1 can
- 33% Cream - 16 fl oz
- Mango - 2 pieces
- White Beans - 1 piece
- Water - 1 tablespoon
- Saffron - a pinch
Step by Step guide
Step 1
Peel the ripe mangoes and cut out as much flesh as possible. Place the mango flesh in a blender and blend.
Step 2
Mix 2 pinches of saffron into 1 tablespoon of boiling water. Add the saffron water to the mango puree and blend again. Strain the puree through a sieve and set aside.
Step 3
Cut the vanilla bean in half. Using the sharp end of a knife, carefully scrape the vanilla seeds from the pod.
Step 4
Pour the cold condensed milk into a bowl, add the vanilla seeds, and mix well. In a separate bowl, whip the cream until stiff peaks form. Gently fold the whipped cream into the condensed milk one spoonful at a time. Spoon 1/4 of the ice cream into a container. Top with a layer of mango puree. Then add another layer of ice cream followed by another layer of puree. Repeat a couple more times. You should end up with 4 layers of ice cream. Close the container and freeze for 5 hours or overnight.
