Ingredients

  • Wheat Flour - 14.1 oz
  • Milk - 8 fl oz
  • Sugar - 2.5 oz
  • Dry yeast - 0.7 oz
  • Margarine - 2.1 oz
  • Chicken Egg - 1 piece
  • Vanillin - to taste
  • Raisins - 1.4 oz
  • Powdered Sugar - 7.1 oz
  • Egg white - 1 piece
  • Meyer Lemon Juice - ½ teaspoon

Step by Step guide

Step 1

Dissolve the yeast in a small amount of warm boiled water, add a little sugar to help it ferment faster, then add 250 grams of flour, warm milk, sugar, and mix everything. Cover with a towel and place in a warm place.

Step 2

Rinse the raisins and soak them in hot water for 15 minutes, then drain the water and pat dry with a towel.

Step 3

When the dough has risen, add softened margarine, vanillin, the egg, the remaining flour, and raisins. Knead the dough well.

Step 4

Divide into well-greased molds with vegetable oil. The dough should fill one-third of the mold.

Step 5

Smooth the top and let it rise in a warm place for 20–30 minutes.

Step 6

When the dough has doubled in size, brush the top with beaten egg and place it in a well-heated oven (160–338°F).

Step 7

Bake the kulich for 30–40 minutes. Check for doneness with a wooden stick.

Step 8

To prepare the glaze, whisk the egg white with lemon juice in a clean bowl and gradually add sifted powdered sugar. Whip everything together.

Step 9

The glaze is ready when the egg white mixture hangs from the whisk but does not run.

Step 10

After the kulich has cooled, brush it with the glaze and decorate.
