- Milk - 7 fl oz
- Dry yeast - 0.2 oz
- Sugar - 6.7 oz
- Wheat Flour - 15.9 oz
- Chicken Egg - 3 pieces
- Butter - 3.5 oz
- Cottage cheese - 17.6 oz
- Vanilla extract - to taste
- Sour Cream - 3.5 oz
Step by Step guide
Step 1
Prepare the sponge. In warm (not hot!) milk, add the yeast, 10 grams of sugar, and flour, mix well, and let it sit for 10-15 minutes.
Step 2
Using a food processor, mix the dough. Start by beating the starter and 2 eggs. Add salt, 90 grams of sugar, and room temperature butter, then gradually add all the flour.
Step 3
Transfer the prepared dough to a greased container and let it rest for an hour, occasionally folding the edges from all four sides; this will make the dough even airier.
Step 4
Dust the work surface with flour, gently knead the dough, and divide it into pieces.
Step 5
Shape into balls, making a dent in the center of each.
Step 6
For the filling, blend the cottage cheese, sugar (90 g), vanilla, and sour cream with an immersion blender until smooth.
Step 7
Brush the buns with a mixture of milk and egg yolk, then fill with the filling.
Step 8
Bake in a preheated oven at 356°F for about 25 minutes.
