Vanilla Pastries with Glaze

Ingredients

  • Raw cane sugar - 8.8 oz
  • Puff Pastry - 17.6 oz
  • Corn Flour for Polenta - 3.2 oz
  • Custard - 2.1 oz
  • Whipped Cream - 1 qt
  • Butter - 2.6 oz
  • Vanilla extract - 2 teaspoons
  • Egg white - 3 pieces
  • Passion Fruit - 2.1 oz
  • Powdered Sugar - 6.5 oz

Step by Step guide

Step 1

Preheat the oven to 410°F. Grease 2 baking sheets with butter. Line a square baking dish measuring 23 by 23 cm with foil.

Step 2

Divide the dough in half and roll each piece into a square measuring 25 by 25 cm and 3 mm thick. Place on the baking sheets. Prick the dough in several places with a fork and bake for 8 minutes until golden brown. Trim each square to 23 by 23 cm. Place one of the squares at the bottom of the dish.

Step 3

Mix the sugar, corn flour, and cream concentrate in a small saucepan. Place over medium heat, add the cream, and cook, stirring constantly, for 2 minutes until thickened. Add 60 g of butter and vanilla. Mix well and remove from heat. Incorporate the egg yolks and pour the mixture onto the dough in the dish, then cover with the second sheet and let cool.

Step 4

For the glaze, mix the powdered sugar, passion fruit pulp, and remaining butter.

Step 5

Remove the cake from the dish by holding the edges of the foil, and pour the glaze over the top. Let it sit for a while to set and cut into 9 pieces.
