Vanilla Peanut Butter Cookies
Ingredients
- Wheat Flour - 2½ cups
- Salt - 1 teaspoon
- Activated Baking Soda - ½ teaspoon
- Baking Powder - ½ teaspoon
- Brown Sugar - 1 cup
- Salted Butter - 8.1 oz
- Granulated sugar - 1 cup
- Peanut Butter - 1 cup
- Vanilla extract - 2 teaspoons
- Farm fresh eggs - 2 pieces
- Unsalted peanuts, shelled - 4.9 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. In a large bowl, mix the flour, salt, baking soda, and baking powder, then set aside. Toast the peanuts in a dry skillet for 5 minutes, then chop them into fine crumbs using a food processor.
Step 2
In a large bowl, combine the sugar and softened butter, then beat with a mixer on medium speed for 3-6 minutes. Add the peanut butter and continue to beat for another 30 seconds, then add the vanilla extract, one egg at a time, and beat for another 30 seconds.
Step 3
Reduce the mixer speed and gradually add the flour, continuing to mix for another 30 seconds. Add the peanuts and stir to combine.
Step 4
Using a tablespoon, scoop out 3 tablespoons of dough, form into balls, and place them on 2 lined baking sheets, leaving about 5 cm between each ball. Use a fork to create a crisscross pattern on each ball. Bake for 7 minutes, then rotate and swap the baking sheets and continue baking for another 5 minutes.

Allow the cookies to cool on the baking sheets for about 10 minutes before serving.
