Ingredients
- Wheat Flour - 19.4 oz
- Milk - 7 fl oz
- Citric Acid - 0.2 oz
- Egg white - 5 pieces
- Butter - 11.6 oz
- Cottage cheese - 28.2 oz
- Sugar - 1.8 oz
- Salt - to taste
- Raisins - 5.3 oz
- Vanillin - to taste
Step by Step guide
Step 1
Prepare the filling. Pass the cottage cheese through a sieve, add 80 grams of melted butter, 3 yolks, sugar, raisins (leaving some for decoration), 50 grams of flour, salt, and vanillin. Mix well. The filling is ready.
Step 2
Pour 375 grams of flour into a wooden bowl, add 250 grams of butter, and chop with a knife until crumbly. Add cold milk, salt, and citric acid, continuing to chop.
Step 3
Knead the dough, divide it into 2 pieces, and refrigerate for 30 minutes.
Step 4
Roll out the dough with the remaining flour, cut into even pieces, form into balls, and place on a baking sheet greased with oil and sprinkled with water, leaving some space between them. Let rest for 10 minutes.
Step 5
Make a depression in the center of each ball and place the prepared filling inside, decorate with raisins, and brush the vatrushkas with yolks. Bake at 482°F.
