- Sugar - 2.5 oz
- Baking Powder - 1½ teaspoons
- Vegetable Oil - 4 tablespoons
- Applesauce - 8.8 oz
- Cinnamon - 1 teaspoon

In a bowl, mix the flour with sugar, then add baking powder, cinnamon, and dried apricots.

In another bowl, make a mixture of vegetable oil and applesauce. You can use store-bought applesauce or make your own by baking peeled apples and blending them until smooth.

Pour the apple mixture into the flour and quickly stir to avoid lumps.

Grease the muffin tins with vegetable oil or line them with parchment paper, then pour the batter to fill the molds about three-quarters full. Smooth the tops with a wet spoon.

Bake the muffins at 356°F for about 30 minutes. Keep an eye on them: when the muffins turn golden, they are ready. To be sure, check for doneness with a wooden stick.
