Ingredients
- Wheat Flour - 14.1 oz
- Sourdough Bread - 5.3 oz
- Almond - 5 fl oz
- Olive Oil - 4 tablespoons
- Sugar - 4 tablespoons
- Orange zest - 1 tablespoon
- Cinnamon - a pinch
- Jam - to taste
- Mini Chocolate Chips - 1 teaspoon
- Nut cream - to taste
Step by Step guide
Step 1
Mix the sourdough starter, flour, sweetener, cinnamon, and gradually add the warm almond milk. Mix well, add the olive oil and orange zest, and knead into a firm and elastic dough. The dough should not stick to your hands. If necessary, add more flour.
Step 2
Place the dough in a bowl, cover with a towel, and let it rise in a warm place for a few hours. You can make the dough in the evening and prepare the brioche in the morning.
Step 3
When the dough has risen well, prepare a work surface and lightly dust the table with flour. Roll out the dough into one large rectangle about 3 mm thick.
Step 4
Cut the rectangle into 4 equal rectangles, and then cut each of them into two long triangles. This will give you 8 triangles.
Step 5
Place one of the fillings at the base of the triangles. Roll the croissants from the base of the triangle to its tip.
Step 6
Place the croissants on a baking sheet lined with parchment paper and leave in a warm place to rise.
Step 7
Bake them in a preheated oven at 356°F for 15 minutes, or until the croissants are golden brown.
