- Buckwheat Groats - 4 cups
- Milk - 4½ cups
- Dry yeast - 0.9 oz
- Salt - to taste
Step by Step guide
Step 1
In an enameled pot, pour in ½ cup of warm milk and dissolve the yeast in it. Add another 1½ cups of milk.
Step 2
Gradually, while continuously stirring, add 2 cups of flour to the pot with the milk.
Step 3
Mix the batter well to avoid lumps. Cover the pot with a towel and place it in a warm place (near a radiator).
Step 4
When the batter rises, i.e., increases in volume by 2-3 times, add the remaining flour, milk, and salt, mix well, and place it back in a warm place.
Step 5
Once the batter rises again, you can start baking the pancakes. When scooping the batter from the pot, do it very carefully to prevent it from collapsing. This affects the fluffiness and crumbly texture of the pancakes.
Step 6
Grease the frying pan with one teaspoon of vegetable oil.
