Ingredients
- Sugar - 3.5 oz
- Brown Sugar - 0.9 oz
- Coconut Milk - 2 fl oz
- Soy Vanilla Milk - 12 fl oz
- Wheat Flour - 10.6 oz
- Flaxseeds - 2 tablespoons
- Baking Powder - 2 teaspoons
- Ground Cinnamon - 1 teaspoon
- Salt - ¼ teaspoon
- Ground dried cherries - 5.3 oz
- Cardamom - ¼ teaspoon
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a muffin tin or place paper liners in each cup.
Step 2
In a bowl, mix both sugars, coconut oil, and soy milk. Stir until the sugar dissolves.
Step 3
In another bowl, combine both flours, baking powder, cinnamon, cardamom, and salt.
Step 4
Combine both mixtures, mix well, and fold in the cherries.
Step 5
Divide the batter among the muffin cups, filling them three-quarters full. You can sprinkle brown sugar on top.
Step 6
Bake for about 25 minutes until done. Leave in the pan for 5 minutes, then transfer to a wire rack to cool.
