- Coarsely Ground Rye Flour - 4.2 oz
- Corn Flour for Polenta - 0.7 oz
- Baking Powder - 1½ teaspoons
- Sugar - 2.1 oz
- Soy Vanilla Milk - 4 fl oz
- Margarine - 1.8 oz
- Vanilla extract - 1 teaspoon
- Maple syrup - 2 tablespoons
- Instant coffee - 2 tablespoons
- Salt - ¼ teaspoon
- Chopped almonds - 0.9 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a muffin tin or place paper liners in each cup.
Step 2
In a bowl, mix both flours, baking powder, and sugar.
Step 3
In a saucepan over low heat, melt the margarine and let it cool slightly.
Step 4
In another bowl, combine the melted margarine, milk, coffee, vanilla, maple syrup, and salt.
Step 5
Combine both mixtures and add the almonds.
Step 6
Divide the batter among the cups, filling them three-quarters full, and bake for about 20 minutes, checking with a toothpick until done.
