Vegan Cookie Dough Fudge
Ingredients
- Pitted Dates - ½ cup
- Oats - ½ cup
- Canned chickpeas - 1½ cups
- Sunflower Seeds - ¼ cup
- Coconut Milk - 3 tablespoons
- Flax seeds - 2 tablespoons
- Chocolate - ¾ cup
Step by Step guide
Step 1
Cook the chickpeas.
Step 2
Make a paste from the sunflower seeds.
Step 3
Grind the flax seeds.
Step 4
Chop the chocolate.
Step 5
Line a 22x22 cm (9x9 inch) pan with foil or parchment paper.
Step 6
Soak the dates in hot water and set aside for about 10 minutes.
Step 7
Blend the oats to a fine flour consistency. Add the dates, chickpeas, paste, coconut milk, puree, flax seeds, and vanilla. Blend everything until smooth.
Step 8
Add the chocolate and mix.
Step 9
Transfer the mixture to the pan and spread it evenly.
Step 10
Place in the freezer for at least 2 hours, then cut into 12 pieces. Store in the freezer. Before serving, let sit at room temperature for at least 5 minutes.
