Vegan Fruit and Nut Cake

Ingredients

  • Wheat Flour - 3 cups
  • Chopped almonds - 4.6 oz
  • Dried Apricots - 5.6 oz
  • Cranberry - 5.8 oz
  • Prunes - 5.6 oz
  • Honey - 2 tablespoons
  • Black tea - 8 fl oz
  • Toasted Sesame - 1 tablespoon
  • Activated Baking Soda - ½ teaspoon
  • Olive Oil - 1 tablespoon
  • Candied fruits - 6.7 oz
  • Sugar - 1 cup

Step by Step guide

Step 1

Brew strong tea (for a 300-gram cup — 1.5 teaspoons of tea leaves) and let it cool.

Step 2

Peel the almonds, chop the dried apricots and prunes, rinse the candied fruits, and dry them on a towel.

Step 3

In a bowl, combine the flour, baking soda, sugar, nuts, dried fruits, and olive oil. Mix well. Add the strong tea and honey. Knead the dough (the dough should be like thick sour cream), and finally add cinnamon, nutmeg, cardamom, and the zest of 1 lemon.

Step 4

Grease a baking pan and dust it with flour (fill the pan with the prepared mixture halfway). Before baking, sprinkle with sesame seeds and bake at 180–374°F for 40 minutes.
